What Are the Best Ways to Cook Chorizo?
Chorizo is incredibly versatile, and how you cook it depends on whether you’re using raw (fresh) or cured (ready-to-eat) chorizo.
1. Pan-frying (most popular method)
Slice or dice the chorizo and cook it in a dry frying pan over medium heat for 5–8 minutes. There’s no need to add oil — it will release its own rich, smoky fat. Perfect for adding to pasta, risotto, or stews.
2. Roasting or baking
Cook sliced or whole chorizo in the oven at 200°C (180°C fan) for 15–20 minutes until crisp and sizzling. This method works brilliantly for traybakes and pies.
3. Grilling or barbecuing
Skewer chorizo chunks and grill or BBQ for 5–10 minutes, turning occasionally. Great for tapas or alongside prawns and peppers.
4. Simmering in sauces or stews
Add chorizo to soups, casseroles, or one-pot meals early in the cooking process so the spices infuse the dish. Ideal for slow cooker recipes and rich tomato-based sauces.
5. Microwaving (in a pinch)
If you’re short on time, microwave sliced chorizo on a plate lined with kitchen paper for 30–45 seconds. It won’t crisp up but will warm through nicely.
Top tip: Always cook raw chorizo thoroughly until firm and dark red all the way through. Cured chorizo is already cooked, so heat it gently to release the flavour.
